grouper

The West Windsor Farmers Market has a fresh fish stall now, apparently union fishermen drive in from Asbury Park, which is due East of us on the coast.  So I needed to figure out how to cook a grouper. I combined this recipe for chard and this one for grouper.

ingredients

  • a pound of grouper in two filets
  • 1/8 cup of butter
  • 3 tablespoons olive oil
  • 8 small cloves of garlic or equiv
  • a generous tablespoon of lemon juice
  • 1/2 cup flour (I used corn/maize flour)
  • 1/2 tea spoon salt
  • 1/4 tea spoon blackpepper
  • 1/16 tea spoon red pepper
  • an egg (& a tablespoon of water)
  • about 2 cups of chard / "spinach" (some such greens.)
  • a tomato
We cooked brown rice first, it takes 30 minutes so we started it 20 minutes early.

Slice the garlic – Will made fairly thick slices.  Whip the egg & water together in a pie plate (!), and mix the dry stuff (in blue above) in another pie plate.

Heat a large good frying pan on medium heat.  When the butter starts melting, pour in two tablespoons of olive oil.  When you think it's hot, pour in the lemon juice. If you're right that it was hot (juice sizzles) throw in the garlic.  

I have no patience so threw the chard in right after that.  Then I rinsed the fish off, then dipped them in the egg mix and then coated them in the flour mix while Will stirred the chard.  After a few minutes the chard had reduced enough I just put the fish on top of it.  I cooked them four minutes on the first side and three minutes on the second. 

There was a lot of egg and flour left over, so while the fish were cooking I sliced a tomato as well as serving the rice into the corner of two large square plates. I put the fish on the rice, the chard on the fish, then threw the tomatoes in the pan with another tablespoon of oil. I fried them maybe a minute then threw in the leftover egg mix and flour mix.  With some frenetic mixing it eventually looked like sensible food so I dumped that to the front of the plate in front of the chard.  Yum!
